More Salad-ly Eats

I slacked a bit this weekend so it’s catch-up time!

 So not the most attractive looking chicken tender, but very tasty. I like free style cooking (as in minimal measuring 😉 ) so I rubbed the chicken tenderly with salt, pepper, poultry seasoning, olive oil and garlic and then cooked it on medium heat. A chinese lady once told me “salt make food crunchy” so I put the salt on the outside of the rub. It was crunchy enough.

My favorite salad dressing ever is olive oil, lemon juice, salt/pepper and crushed garlic. Crushed with a mortar and pestle for healing properties. Just kidding about that last part, but I grew up with mortars and pestles for crushing and I think garlic, chilis, etc. taste best when crushed that way. Crush crush!

So my friend turned me on to putting goat cheese crumbles on my salad. I try to stay away from dairy in the spirit of Paleo eating, but a few sprinkles won’t hurt. 😉  (And down the slippery slope of compromise I go … lol.)

When I am stressed I usually lose my appetite altogether but just in case, it’s nice to have an enormous batch of salad ready to gorge myself on. Once you get used to it, it’s like popcorn. Well not really, but I can eat bowls and bowls of salad like a piglet. A well mannered piglet of course. Haha.
